Fast, Cheap & Easy {Dinner, Not Me!}

As The Cuties have more extracurricular activities, it’s been a challenge to come up with meals I can cook that are tasty, fresh, fast and inexpensive.

Tonight was one of those nights ~ we walked in the door at 5:30, but I managed to have a hot meal on the table by 6:00, and the whole thing was under $8!

First, your ingredients:

1 pound of penne, 1 28 ounce can of peeled plum tomatoes, 1/2 cup of heavy cream, fresh garlic, 1 onion, fresh basil, olive oil, grated parmesan cheese, red pepper flakes, vodka, salt and pepper

Start your water boiling for your pasta.  Chop the onion and cook it in about 3 tbsp of oil for about 5 minutes or until it really softens.  Add 3 large cloves of garlic and saute for about 2 more minutes.  While your onion and garlic are cooking, drain your can of plum tomatoes and give them a rough chop and then add them to the pan.  Add 1/4 tsp of red pepper flakes and 1/4 cup of vodka and stir.  Let simmer for about 10 minutes.  It will start off looking like this and reduce just a bit.

By now your water should have come to a boil, so make sure you’ve added your dry pasta and are cooking that while you work!

After the tomatoes have simmered, add the cream and stir to heat it completely.  Your sauce will now be more of an “orange” color.

Then chiffonade about a dozen to a dozen and a half large basil leaves and add them to your sauce as well.  Salt and pepper to taste.

Drain your pasta and then put it back into your pasta pot.  Add the sauce and stir well {it’s easier to do it this way}.  Add in a 1/2 cup of grated parmesan and stir until melted.

Transfer to your serving dish and dinner is ready!

This dish reheats really well in the microwave, so leftovers work great for another dinner or for Cute Husband to bring for lunch!

***I also wanted to share that while there are tomatoes in this dish, it is very non-acidic.  As someone with Crohn’s Disease and Reflux, I usually avoid tomatoes like the plague, however, canned and peeled plum tomatoes are “safe” for me, and so this is a great way to enjoy them!***
